HELENA, Ark. -- June 10 is the deadline to submit your best, crowd-pleasing rice dish to the 2014 Arkansas Rice Expo Recipe Contest.

“The objectives of the contest are to promote the healthy attributes of cooking with rice, to showcase the rice industry, and to advance cooking skills,” said Keith Cleek, Phillips County extension agent with the University of Arkansas System Division of Agriculture.

The No. 1 contest rule is that rice, in any form, must be the prominent ingredient of the dish, whether it’s an appetizer, entrée, side dish or dessert, Cleek said.

Another requirement is that all ingredients should be easily attainable at any local grocery stores.

If your rice recipe is chosen, winners of preliminary round will be notified by July 1 for presentation at the annual Arkansas Rice Expo, which will be held Friday, Aug 1 in Stuttgart.

First place winner will win $200, second place winner will win $150, and third place winner will win $100. The winner’s recipe will also be a highlight in the 2015 Arkansas Rice Expo Cookbook.

Submitting your rice recipe

Each contestant needs to submit a completed electronic and hard copy entry form as well as an electronic copy and three copies of 8.5 x 11 typed recipe – for the judges - that include the measurements of ingredients in order of use, step-by-step preparation, cooking methods, number of servings, and cost per serving.

Mail the entry forms to: Keith A Cleek, AEA-EFNEP/FCS Phillips County P.O. Box 684, Helena, AR, 72342.

The top 10 entries in the state will be judged on the basis of the recipe and the dishes’ appearance.

Top 10 finalists will then be invited to bring their dish at the Arkansas Rice Expo at the Grand Prairie Center in Stuttgart.

Since safe food handling is of importance, food must be received at safe temperatures. Temperature will be monitored at check in to assure safe food handling and incorrect temperature can cause lost of points in palatability. Reheating the dish is allowed after arriving. For additional information on Safe Food Handling Practices and correct temperatures contact your local County Extension Agent – FCS or refer to the Extension Publication FSFCS82 “A Quick Consumer Guide to Safe Food Handling,” which can be accessed via www.uaex.uada.edu.

Five entries that move into semifinals will be judged on palatability of the rice and overall taste of the dish. Semifinalists will also be interviewed about the ingredients, preparation, and the dish’s nutritious facts.

Winners must be present at the awards presentation to receive prizes. Failing to appear will cause automatic forfeit.

For more information or a complete list of the rules contact your local County Extension Office. Or visit our web page at http://www.uaex.uada.edu/rice-expo/.
