Nina Roofe

Nina Roofe - Assistant Vice President - Family and Consumer Sciences

Dr. Nina Roofe is the Assistant Vice President for Family and Consumer Sciences with the University of Arkansas Cooperative Extension Service. She oversees programs in education, training, food safety, nutrition, health management, wellness, family life, financial management, and volunteer development. She is nationally credentialed as a Registered Dietitian Nutritionist by the Commission on Dietetic Registration; as a Certified Nutrition & Wellness Educator by the American Association of Family & Consumer Sciences; and licensed by the Arkansas Dietetics Licensing Board.

Nationally, Dr. Roofe serves as the Speaker of the House of Delegates, the governing body for the Academy of Nutrition & Dietetics. She supports national planning committees for leadership development and mentoring programs including the American Association of Family & Consumer Sciences’ Leadership Academy and the Council of Administrators in Family & Consumer Sciences Emerging Leaders Program. She has served on and chaired the Academy’s Ethics Committee, is a member of the Nutrition and Dietetics Educators and Preceptors Organization, the Council of Administrators in Family and Consumer Sciences (president 2022-2023), the International Federation of Home Economics, and is a former board member and site reviewer for the Accreditation Council for Education in Nutrition and Dietetics.

She has a Bachelor of Science in Dietetics from the University of Central Arkansas, completed the dietetic internship at the University of Arkansas for Medical Sciences, a Master of Science in Corporate Health Promotion from the University of Arkansas – Fayetteville, and a Ph.D. in Family & Consumer Sciences Education from Iowa State University. Before joining Extension, Dr. Roofe worked in dietetics and in higher education.
