Earl Grey Tea Cookies
Makes approximately 16 cookies
Ingredients:
- 1 cup salted butter, softened
- 1 ¼ cups granulated sugar
- 1 egg
- 2 tsp vanilla extract, separated
- 2 ½ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp salt
- 1 heaping tbsp dried lavender (food-grade)
- 3 bags earl grey tea
- zest from one lemon
- juice of half a lemon
- 3 tbsp honey
Directions:
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream together butter and sugar until smooth. Then add egg and half the vanilla (1 tsp) and beat until incorporated.
- Add flour, baking soda, baking powder, salt, lemon zest, lavender and tea (cut open tea bags and empty tea into the bowl), and beat until just combined, scraping sides of the bowl.
- Roll dough into 1 ½ - 2 inch balls and place evenly on baking sheet, with two inches between each cookie. Bake for 14 minutes, or until edges start to turn gold.
- Remove cookies from oven, let rest on baking sheet for 3 minutes or so, then move cookies to a cooling rack.
- Combine lemon juice, honey, and remaining vanilla (1 tsp) in a small bowl until honey is thin. Spoon honey mixture onto cooling cookies. Honey mixture will soak into the cookie.
- Repeat steps 4-6 until remaining dough is cooked. Enjoy!
