I can't tell you how many times I've bought celery for a recipe. I use a stalk or
two....and then weeks later find a slimy mess in the produce drawer. I'm the only
one in my house that even likes celery, so sometimes I wonder why I even bother buying
it!
I don't like wasting food - I feel like I'm throwing away money. While celery isn't
super expensive, it can create a pattern.
My mother-in-law has been trying to downsize, and she gave me 2 dehydrators. I was
pretty excited! I wanted to try one out, and I had some celery in the fridge. So I
dried the celery. I used it mostly in soups and casseroles - my boys hardly even
noticed it!
So when we had some leftover celery at work, I dried that also. This time, I looked
up the recommendations from the National Center for Home Food Preservation. This site is my go-to site for anything related to food preservation! I just downloaded
